Recipes were judged using these criteria:

Simplicity (50%) – easily sourced ingredients and ease of preparation
Originality (25%) – creative use of duck in a non-traditional dish or updated classic
Accuracy of recipe (25%) – correct ingredient listing and method
Flavor – absolutely fabulous taste!


Entrants were allowed to submit up to three recipes for any menu part: appetizer, soup, salad or entrée.
